Dealing with a Yellowtail Loin
So you got the hang of salmon, and you notice that unless you want a tiny piece of yellowtail, it seems to be sold in these big vacuum-packed frozen bags labeled “Yellowtail loin”. You open one up, and you’re like “What the f*** do I do with that?”. At least, that was my first reaction.
Don’t worry, though. A yellowtail loin has the exact same basic structure as a salmon fillet. Take a look:

So you treat it similarly to how you would a salmon fillet when making a saku block. The only difference is that towards the back, you might want to cut the yellowtail loin horizontally in 2 to make 2 saku blocks stacked on top of each other.
